While the green and white are kept "raw", black teas are intentionally allowed to darken, to transform their fresh sugars into deep, complex compounds. Leaves are fully oxidized; this intensive processing gives the black tea its characteristic dark color, robust body, and rich, comforting flavors that stand up well to blending, sugars, milks, and a variety of add-ins.
